Day 4 Walnut Lentil Pate

This is a take on the delicious Walnut Lentil Pate made by Angelica Kitchen in NYC which is the reason I decided to make it.  Angelica’s pate is so good, hearty and healthy that I wanted to try making my own, and man was it good!

Ingredients

1 cup raw walnuts

1 ½ cups cooked lentils

2 tbs water

1 tbsp soy sauce

2 tbsp lemon juice

1 tsp dried tarragon

1 tsp dried thyme

1 tsp dried parsley

3 green onions chopped

2 tbsp olive oil

 

Soak and cook lentils before use.  Use any onions you like, and any spices you prefer although I would suggest following the recipe if you can since the results are so good.

 

Place all ingredients in food processor using an S blade and chop until mixture becomes smooth and creamy.

 

You can eat this yummy pate in lettuce wraps, salads, with rice crackers or with veggie sticks like cut up celery or carrots.
