Veggie Tacos!

Tacos are a comfort food for me, and I am happy to have found a way to still eat my tacos without eating the shell! This recipe is quick and easy for a week night dinner.

2 tbs olive oil

1/2 cup water

1 package fake meat (TVP, or Wheat Meat, or seitan, or tempeh whatever you like)

1 pack taco seasonings (low sodium)

taco sauce (or hot sauce)

1 can sliced olives

shredded cheddar cheese

as many leaves of lettuce as tacos you’d like to eat, washed and drained

 

Heat olive oil over medium heat, and add fake meat.  Cook meat until heated throughout.  Add water and flavor packet and simmer until most water is gone.  (You can use your own spice blend if you prefer, and can also add chopped onions, beans or peppers if you like.  I keep it simple when I am in a rush).

Once meat is cooked and ingredients that need to be chopped are cut, the work is done!  Feel free to add veggies you like to your taco party like tomatoes, avocado, red onion, cilantro etc.  You can always add what you like and get more creative if you have the time.   Layer ingredients in lettuce taco shell (I do meat, cheese, olives and sauce above) and enjoy!

Like any good taco meal, these make a mess so make sure to have your napkin ready.  It isn’t any fun if it isn’t messy, right?!
