Healthy Banana Bread!


Adapted from

3 ripe  bananas, mashed with a fork

1/4 cup olive oil

1/2 cup maple syrup

1/4 cup honey

1 & 1/2 cups whole wheat flour

1/2 cup wheat germ

1/2 cup ground flax seeds

1/2 teaspoon salt

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/2 teaspoon all natural vanilla flavoring

preheat oven to 375.  mix all dry ingredients in a large bowl.  add bananas, oil and honey (if honey is measured after oil, it will slide out of cup easily).  Mix until batter is smooth and creamy.

Pour batter into oiled bread pan and bake for 25 minutes or until cooked through.  (use toothpick or skewer to test that it is cooked all the way through).

Let cool, slice and ENJOY!

This is very yummy and pretty healthy (although it is hard to tell!).  You can always use less oil, an oil substitute, different flour (especially if you are gluten allergic), a different sweetener OR less sweetener if you like more of a true bread than something cake like.
