Garlicky Thyme Lemon Tempeh

1 package Tempeh (8oz)

Marinade:

3 tablespoons Lemon juice
2 tablespoons Tamari
1 tablespoon Balsamic vinegar

1/4 cup fresh Thyme, leaves whole, soft stems roughly chopped

2 tablespoons Olive oil
4 cloves Garlic, smashed

1/2 cup veggie broth

Steam tempeh for 10 minutes to reduce bitter flavor and to allow marinade to be absorbed easier.  Since I do not have a steamer I simply placed the tempeh (cut in half and then into squares or triangles if you prefer) in a frying pan covered in water at medium high heat.

While steaming the tempeh prepare the marinade.  Whisk Olive Oil, tamari, lemon juice, veg broth, vinegar, thyme, and smashed garlic in a medium- large sized bowl.

Once tempeh is done steaming (about ten minutes) add to marinade and let sit for 1-4 hours.  The longer it sits the more flavor it absorbs.

After marinating, you can grill or broil tempeh.  I grilled it in my brand new grill pan, although I always prefer the real thing when the weather is agreeable.  Rub wit  h garlic and thyme to add flavor when grilling.

Grill for about ten minutes, or until desired char is achieved and remove from pan/grill.  Serve and eat!  This is super delicious and full of protein and wonderful fermented love.

You can use this in a salad, sandwich or as the protein in your meal and it is delicious!!!! I ate mine with a beet salad and an artichoke! YUM
