2 cans peeled whole tomatoes
3 cans beans (Chick peas, Black beans and Dark Red Kidneys)
1 package soy/wheat “ground meat”
1 red onion chopped
1 green pepper chopped
1 jalapeno chopped
1 spice packet (McCormic Chili)
1 tablespoon Olive Oil
I didn’t take a picture of this one either, but it was GOOD. This recipe reminds me of the chili my mom used to make when we were growing up. Nothing too fancy or complicated, just throw it all in the pot and then eat!
Heat Oil in a large pot over medium heat. Add Onions, green and Jalapeno peppers and soy meat and cook until liquid is gone and things begin to brown.
Then add spice packet, 2 cans of beans drained and rinsed, one can of beans with liquid and tomato liquid. Take whole tomatoes and rip them into pieces as you add them to the pot. Add liquid smoke as well and stir. Let simmer for about an hour or until liquid has reduced and chili has thickened. You can add cayenne pepper or crushed red pepper if you like your chili spicy. Serve with grains, onions, cheese or other condiments and enjoy. Just like mom used to make!
