Balsamic Roasted Onion


Inspired by

4 medium- large onions
Olive Oil
Balsamic Vinegar
1/4 cup shredded parmegan cheese
Sea Salt
Fresh ground Black Pepper

Preheat oven to 400 degrees.

Trim the base and head of onions. Place base  down and make two crossed cuts in onion top.   Spread cut top open for seasoning.   Wrap each onion individually in foil leaving tops of onions exposed for seasoning. Drizzle with Olive Oil and Balsamic vinegar, and sprinkle with salt and pepper. Fully wrap onions and cook for 45 minutes.  Unwrap tops, add cheese and cook for another 10 minutes .  Then remove from oven and allow to cool.

Now dig in!  OR store for later! These will last in your fridge for a few days, just reheat and enjoy or add to your favorite salad for some extra yumminess!
