1 potato, roughly chopped
4 turnips, roughly chopped
1 bunch scallions, roughly chopped
2-3 cloves Garlic, minced
1 Tbsp Maple Syrup

1 tbs vegan butter
2 cups vegetarian broth

Cooking this recipe is a breeze! The easiest way to do this is to start with a Large soup pot over low medium-high heat. Add vegan butter and allow to melt. If you want to do this in steps, add the onions and cook for 3 minutes. Then add Garlic and cook for another three minutes, and then add turnips, potatoes, salt and pepper, and cook for five minutes. If you’re doing the express version, throw it all in at once and cook for 7-10 minutes until everything is cooked through.
Once veggies are cooked, add veggie broth and bring to a boil. Once boiling lower to simmer and let simmer for 5-10 minutes. Turn off stove-top and allow soup to cool.
Now puree soup with either a immersion blender, or in batches in your standing blender. If you are using a standing blender return all soup to the large pot after blending, and mix in maple syrup. Now serve!
This is a great starter for any meal and there is room to get creative by adding savory spices you enjoy like sage, rosemary, or thyme.
