Raw Vegan Gluten Free Ginger Snaps!

15 or so dates, soaked in warm water to soften for 15 minutes, and drained

1/4 cup candied ginger

2 Tablespoons Molasses

1/8 Teaspoon Sea Salt

1 Teaspoon Nutmeg

1 Teaspoon Cinnamon

1 Teaspoon dried ground ginger

2/3 cup Almonds

2/3 cup Walnuts

2 Tablespoons ground Flax Seeds

2 Tablespoons coconut flour

 

Step 1 Place nuts in food processor and allow to chop nuts into small pieces or until powder like (depends on if you like chunky nuts in your “baked goods”).

Step 2 Add Soaked and drained Dates and Candied Ginger to nut mixture and process until ingredients become a paste.

Step 3 Add the rest of the ingredients (both dry and wet) and process until everything is mixed evenly.  You may need to scrape the sides of the food processor a few times until everything is fully processed and dough like.

Once ingredients are of a dough like texture, you can store as is for future use, or roll into balls and flatten into cookies.  Then Enjoy!

Note:  Candied Ginger has a lot of sugar in it, if you are using this recipe and need something low glycemic, please omit the candied ginger and use a Tablespoon or so of raw ginger.  For added sweetness increase molasses, or add raw honey or maple syrup, but the sweetness of the dates should certainly make this sweet without anything additional needed!
