2 Green Peppers, remove seeds and stems and quarter for grilling
1 Pint Shitake Mushrooms, wiped with a wet towel
1 Large Eggplant, Thinly sliced
1 Tomato, Thinly Sliced
1 Yellow Onion, Thinly Sliced
2 Large Zucchini, Thinly Sliced
Greens (from 1 head of Romain Lettuce or green of your preference)
Marinade For Veggies found here. Marinate for 15 minutes to an hour and grill.
